i have to make a wedding cake and i have begun baking the cakes. i have put them in the freezer. how many day before i have to decorate them do i need to pull them out of the freezer. this is my fist big cake, i really need some help.. thank you ginger

Typically when I defrost a "FROZEN" cake - I give it 2 days maybe 3 to be safe. But it all depends on your house and your temp in the area you live in.
Remember not to unwrap the cake until it has completely defrosted.

Cake really defrost pretty quickly. Mines defrost in the counter for about an hour or so--some people take just 30 minutes.

Well, the largest cake I've frozen to date is only a 12" round - but it defrosted pretty quickly.

I also use KammKakes recommendation to thaw in the wrappers, but RylanTy's timeline for thawing on the counter. icon_smile.gif

I freeze every cake, every time. I wait until it's cooled and then wrap it in two layers of saran and two layers of foil. Freeze. I thaw in the fridge overnight and then on the counter the morning I want to decorate for maybe an hour. Unwrap, sit for maybe 20 minutes (don't want to ice a cake that's got too much condensation in it) and get going!

i freeze all my wedding cakes before frosting and they take much longer than an hour to defrost especially if they're sitting flat on the counter. I'd stick them on a cooling rack for better circulation of air underneath and give the larger tiers a full 4 hours to defrost. whatever you do don't frost the cakes when theyre still partially frozen in the middle or else the frosting will crack on top to let moisture escape and the frosting on the very top middle might get a little soupy

it doesn't hurt to defrost a couple hours sooner than necessary so i'd rather be safe than sitting around waiting impatiently icon_smile.gif
