I am looking for a cheesecake recipe that does not call for a crumb...??? appreciate the help...thanks in advance...

Instead of using graham cracker crumbs, you can use a butter cookie dough as follows:

1 cup all-purpose flour

1/4 teaspoon baking powder

1/8 teaspoon salt

3 tablespoons sugar

3 tablespoons unsalted butter, softened at room temperature

1 egg yolk


Directions:

Combine the flour, baking powder and salt in a bowl. Set aside.

In another bowl, cream the butter and sugar together with an electric mixer until light and fluffy.

Beat in the egg yolk.

Add the flour mixture, and stir to combine. NOTE:The texture will be like cornmeal.

Pour the mixture into the bottom of your pan, and spread it to cover the bottom. Then press it down with your hand.

Put the pan in the oven and bake for 15 minutes at 325 degrees F.

Remove it from the oven and let it cool, about 5 minutes.

Then pour your cheesecake batter over it, and bake the cheesecake according to your recipe.

My brother is Celiac but Loooves cheesecake so when I make him cheesecake I simply do it without a crumb bottom....I do however either leave it in the pan or have a disposable one...but because it's just for my bro he doesn't mind
