Can anyone tell me if there is anything I can add to MMF to make it harden like gumpaste? Also does anyone know the ratio of cream to chocolate for ganache that you use to put under fondant? Thanks in advance Smile

Try adding Gumtex to your fondant. Also, I have read that the ratio is 2:1 or 3:1 for the ganache. There are recipes on this site that would explain it.

Where are you in Ontario?

For a piece about the size of a tennis ball maybe 1/2 to a full teaspoon. Depends on how sticky or dry your fondant is to start with. I have done this many times and it dries beautifully.

i know the quickest way to harden mmf is to repeatedly put it in the microwave. every time you heat mmf in the microwave it cooks it and hardens it more and more each time.

Would I use the same amount if I was using Gum Paste powder instead of Gum Tex?
