A Few ???? About Freezing Cookies And Ri

I want to make Valentines cookies for my sons class, but I am having surgery on the 6th icon_cry.gif and I don't know if I will be up to bake and decorate cookies for Valentines Day. I was wondering how far in advance can you make and freeze cookies and does it change anything with the taste or texture. And how do you freeze them? I was thinking wrap in saran wrap and then foil, but I'm not sure if that's the right way. Can I make and color the RI and then freeze it. I know you can freeze Antonia74's RI, but I don't know if you can freeze it colored. Any help at all will be GREATLY appreciates. Thanks shiney thumbs_up.gif ! Do you wrap your cookies before you put them in the container? I think I'm gonna bake them and freeze them, then frost them during the week. I'm still contemplating. I'm going to be on bed rest so I don't know. Most of the cookies will be red and I read on the other thread that it bleeds when frozen. I'm wondering if I should just flood the whole cookie, then freeze them and do the final touches the day before. Sorry for babbling icon_redface.gif I just don't know what to do (the story of my life) icon_lol.gif .

If your red or other color is completely dry before layering, you should be okay. I do not wrap mine, but my containers are airtight, that's the trick. Some people use ziplock bags, but I get breakage when I do that. Just be sure to let them thaw completely before layering on next colors
