Welcome to CC! I used to work in a bakery in Menlo Park.
When I sculpt, I just start carving away. If I cut away large pieces of cake, I save them to add on in other places. I have a squirrel cake in my photos which I carved.
Mikes Amazing Cakes, are just that ...amazing. He has a DVD now, on carving a car. I am sure the techniques would apply for other carvings. This is a link to his website and you can go to DVD's and classes.

Roland Winbeckler has a book on sculpted cakes. You can check his out at, www.winbeckler.com
also.... toomuchcake here on cc has a dvd on sculpting animals. This is the link to those.

Thanks, BCJean!
Dee, when I teach a beginner how to sculpt, I always start them out using paper templates at first. Once you get a little bit of experience and a feel for what you're doing, you probably won't need them, but at the beginning, it's a big help. I carve everything freehand by now, and you can go to my other website at www.cakedalaska.com to see some in-progress pictures of sculptures to give you a little bit of an idea of the process.

Thank you BCJean. I am located in Palo Alto. Nice to know someone close to me. Do you know of any classes in our area that we help me with sculpting? O just cake classes in general?
