Okay, I tried. I really did. I searched and searched for threads on caramel apples. I actually even hijacked one of Melvira's cupcake threads.

I just can't find the threads - I KNOW there MUST be a ton out there. I can master Google, but not searching here.

Hi Sweet,

I had to make 70 caramel apples this past weekend for wedding favours. It was my first time making them so I didn't know what to expect. I did some research on the internet and this is what I came up with. They did come out absolutely fabulous but they are a lot of work. This is the ingredients for 70 but if you divide it by 7, you'll come up with the quantity for 10!

70 apples (I used MacIntosh)
7 kg Kraft caramels
cookie or popsicle sticks
Toppings (candy sprinkles, nuts, toasted coconut, skor bits, choc, etc.)

Wash apples and dry thorough. Let chill in fridge for several hours or overnight.

Push stick through apple and brush hole with a little lemon juice to prevent browning in that spot.

Unwrap caramels (a very important tip is to unwrap them a day or two before you need them because this takes up the most time. I learned that the hard way!!!)

Get two large 2-cup measuring cups (one for dipping apples in and one for melting caramels). Fill one with caramels and add 1 1/2 to 2 tablespoons water. Melt in microwave 30 seconds at a time, stirring the mixture, and then heating again til caramels are dissolved.

Dip apple in caramel, twirl slowly to remove excess (you can even take excess off with a spoon on the bottom of apple), then dip in your favourite topping which is already laid on in a flat pan. Then place on parchment paper square (waxed paper apparently sticks to apple sometimes). Place in fridge to set.

This is a constant process of heating and reheating the caramel but if you have the caramels unwrapped (which I didn't
icon_redface.gif ), then it goes quite quickly.

I used toasted coconut and candied sprinkles but the toasted coconut ones were absolutely out of this world! I then put them in cello bags (and surprise, surprise, they didn't stick to the cello!) and tied off with a ribbon.
