I have left my cake out with the frosting on it for a day before serving and it was just fine. The shortening in it helps preserve if you will plus you are covering with fondant. It should be just fine!

thanks cakemommy - i don't want to make anyone sick but i don't want to refrigerate my fondant either!

yeah, it's tricky!!! Just frost and cover the cake with fondant as late as you possibly can before the event.
