I was asked to make some cupcakes for a child who has an allergy to eggs, so I went on CC looking for a recipe and I found this one. It seemed really easy and certainly not a lot of ingredients, so I tried it, and WOW!!!!! It ranks right up there with my favorite WASC cake!!! I made a few extra cupcakes for my kids, but guess what....I ate them all!!! I used a Walmart brand white cake mix and 12 oz. of diet 7-up and that's it!! It was so easy and they are amazing!! this is a recipe that I've seen with Weight Watchers.
Another one to try is adding a can of pure pumpkin, and then the water recommended on the box.
I've been told it works well with any cake flavor but I would stick with spice or carrot.

I think regular soda would probably work, too, and maybe that's why I kept eating them....because I knew they had DIET 7-up so there was fewer calories!!! icon_lol.gificon_lol.gif

I am not surprised that this is a good recipe, even though I have not made it I have made the 7-up cake, and it makes a very good moist pound cake.I will have to try it.Thanks.
