I just booked a cake that is going the be the replica of a new energy efficient apartment building. It's going to be the first of it's kind in our city/province. There are going to be alot of important people and government officials there. (No stress at all!!!)
I was just wondering if anyone had any ideas on how I can put this together, or what type of mediums to use. I think it will be 3 9x13 cakes stacked. Might be smaller, I haven't figured it out yet.
She had mentioned wanting to have edible images on the sides of the cake of the actual building. They want the roof, front and back deck 3D and also all the landscaping done.
So what do you think?

Ooooohhhhh what a fun project! How long do you have to plan & produce this huge effort?
First make sure you have a *VERY!* firm, solid base board for this to sit on, allowing enough room for the landscaping.
The 3-d parts can be gumpaste or gingerbread.
For the 'house' part....probably 3 dbl-layer sheets with support between each (in each of the two lower tiers). You don't say how many they want this to serve so don't know what size to suggest. |

I would definitely use gumpaste for the deck and roof to keep the shape. This can be made well in advance of the cake. If you are going to do 9x13 cakes I would stack more than 3. I just stacked 4 to carve a van for scooby doo and I think for the apartment building you will need at least that height. As for the trees, I haven't done anything like that yet...hopefully someone else can help there! Good luck! |

I have an idea for your trees.
Make plenty of leaves with wire stalks. Arrange together with floral wire to form branches (much like you would a flower spray). Then arrange the branches onto bamboo skewers wraped in floral tape. (multiply to make bigger in size.)
Hope you get the general idea.
Good luck, and make sure you get plenty of rest between workings. This seems like a big project. |

The cake is due Nov. 20 and it's supposed to feed 75 people. It's one of those ones that you really need to do well, because it could drum up alot of business for future parties and events. I do have over 4 weeks to plan it. She was really keen on the edible images of the actual building to cover all the sides. I just have no idea if that is really going to look good or not. It's a toss up! It could look fantastic or like complete garbage. It definately would be easier to just paste them on the sides!
Me and edible images have a love/hate relationship.
I think I'm going to watch the episode of Ace of Cakes (I have them all on my PVR) where they make that house replica for the 1st anniversary and see if I can get any ideas.

To me, it does not seem too difficult, the only part would be the carving, after that it all just falls into place, make sure you insert enough dowels for support. I would definitely do all fondant and the trees, I would use chocolate sticks and carve a little at those to give them that rough "bark" look for the trunk and the limbs and then do fondant leaves. It is a lot of work so give yourself a week to practice and then a week to actually do it, but that is just what I would do. I do agree with you on the 13x9's stacked. I'm considering doing a building as well. The community college I teach at has a new building and we're having the dedication first week in December. There would be a lot of people around, so as with you, it would be good advertising. I was considering making the gable roof with rice crispies. I think it would hold that triangle shape better. I was going to make the trees with sugarpaste. I wouldn't go nuts making leaves. I'd just make a basic tree shape. The focus should be on the building. I was told I could get a brick pattern that would press into fondant or buttercream at Michael's in the polymer clay section. I couldn't find it, but was kind of in a hurry, so maybe they have them and I just didn't see them. Keep us posted. I think it will be a really cool project. |

Yes you can get those presses at Michael's. There usually are like 3 per pkg and the size of the pkg is only about 4"x5" so they are easy to miss.
If the need is for only 75 servings, make a 4" base of styro, then stack two 8x12x4 sheets. Each of those shouold give you about 48 servings....lots of extra for those just "having to have a 2nd helping of this delicious cake!"
I'd put it on a sheet of plywood base about 15"x20". Be sure to cover that wood w/contact paper 1st; then if you want something else over that.
I think we are all looking forward to seeing this creation because I know you can do a super job on it. |
