I am making my first wedding cake. 5 tiers -- each tier is 4 layers of chocolate cake with 3 layers of chocolate mousse filling and buttercream frosting on the outside. The cake needs to sit out for at least 5 hours at the wedding reception, and I am terrified that the mousse is not stable enough to support the cake, and that the sides will begin to bulge, and then collapse!

How long can a buttercream cake usually sit out before it gives out? Andy suggestions for how I can prevent this disaster (the only solution I can think of at this point is to cover the whole thing in fondant, which is a last resort). Any advice/support is appreciated!

Make sure you have it well chilled before delivery. And a good support system. The support system should help keep it from bulging etc.

FYI, the cake tiers are upheld by means of cake boards and dowels or other supports illustrated in the first link.

To prevent leaking layers, use a frosting dam as described in both links. Also gives info to prevent bulging.

Unless you're making a faux mousse (using either Rich's Bettercreme or Pastry Pride) - the cake will require refrigeration.

I don't think you should have any collapsing issues as long as the tiers are properly supported. Relaz...I'm sure all will go off without a problem! I was really nervous the first time I delivered a cake to a country club many hours before the party. I checked on it more than I check on my kids!...lol...good luck! It'll be GREAT! Thumbs Up!

Days.

Actually, I've never had a cake "give out". Laughing

Follow the above advice about using a BC dam to hold the mousse in place. You'll be fine. Thumbs Up!
