Wondering Whipped Cream Icing And Mmf?

Hi, I will be making a cake soon and my customer wants whipped cream icing the cake instead of buttercream I also want to add some MMF pieces to it. My question is will the whipped cream stand up to the MMf or will the MMf sink into my whipped cream and it's borders? Thanks
I don't think your biggest problem will be sinking you'll have a problem with the whipped cream eating though your fondant. For what ever reason whipped cream will break down your fondant. If your going to just be doing decorations to add to the cake you might consider using chocolate to make them.
Ok what if I use Nutriwhip an oil based whipped cream not the dairy 35% cream? Would that be ok you think?
I've never heard of riches bettercreme is it oil based maybe they are the same Oh I don't know!!!
Something non dairy should work I think it might be the water content that breaks down fondant. Not sure though hopefully someone else might be able to help with that. I think you need to ask her what she wants as far as the icing. And if its definitely the whipped cream I would try making the decorations from chocolate, like I mentioned before. Chocolate is perfect with whipped cream. And the candy melt and molds come in so many varieties you can do just about anything with it. If she is willing to go with a BC then use the fondant and try this recipe:

If you add a tiny bit more milk and let it beat for the whole 5 minutes at the end it will come out very light and fluffy.
I really hope this has helped some. I know its not exactly what you hoped for but I think some pretty good alternatives. BTW I made cupcakes for my daughter last year with whipped cream icing and fondant hearts on top. She was crushed when they got to school and had all broken and fallen off. The whipped cream will not hold under MMF even if you stabilize it.
Pardon me for butting in , I was just wondering what Charmed meant by the above statement. Will the whipped cream icing break down the mmf that is covering the cake? Please excuse my ignorance.
The reason I ask is because I have a customer who wants a whipped icing also because she doesn't like the BC. Then I was going to cover it in fondant.

You cannot cover whipped cream with fondant it will eat away at it or "break it down" almost like melting it off. You might try IMBC.

I had no idea it would break it down. Is IMBC, Italian Meringue butter cream?
Stabilized whipped cream is when you add gelatine to the whipped cream. That makes it more stiff and easier to pipe simple decorations with it.
I thought pastrygirl33 meant to put the whipped cream underneath the MMF...or did you mean to put the whipped cream on top of MMF?
yeah I wanted to ice the whole thing in whipped cream then add mmf pieces to it on top , but maybe I'll go with the nutriwhip can anyone tell me what are the ingredients in riche bettercreme so I can compare to my nutriwhip. It is oil based and holds up pretty well even for basketweaves. Maybe that will hold under fondant. Also how long for the fondant to be eaten away maybe I could test my nutriwhip and see if it stands up to it. I have a few more days before I have to start my prep and mise en place for her cakes so if anyone could tell me how long it usually takes for the whip cream to eat away at the fondant I could see how long nutriwhip takes or if it even does it may be good? Well I'll see eh?
