I am looking for a good filling to make with a coconut cake. I am making Wasc cake substituting coconut milk, coconut and rum flavoring. Any suggestions for something to go with this combination? Thanks! |

I have three thoughts for fillings inspired by other desserts:
orange cream with coconut - Ambrosia
Banana cream - Coconut BaBa Cake (old family tradition)
cream, pineapple, coconut, maybe cherry juice - Pina Colada

I've done lemon curd with a coconut cake. Although I don't know how the rum changes that equation. |

Last time our cake club met and we did a coconut cake we just did a plain vanilla buttercream filling -- to let the coconut flavor stand on its own. Delicous!!  |

I did a coconut cake that was absolutely delicious, but don't have the exact recipe handy. I can tell you that the filling was a basic custard made with Pina Colada mix (without alcohol) instead of milk or cream and shredded coconut. I think I also added some Malibu Rum for flavoring! Delicious! |

Coconut Cake is my all time favorite cake. My mother has made it for my birthday as long as I can remember. We use plain old strawberry jam as a filling. It really is wonderful. |

Here's my Coconut Cake recipe with filling suggestions and recipes. I particularly like lemon curd or raspberry filling (think Raspberry Zinger!). Lime curd is really good, too.

I'm with Kara on the pineaple. I've done it with a pineapple curd. Tastes very tropical. |

I just use vanilla pudding. AWESOME !! Never have any complaints, only compliments on how moist it makes it. |
