I'm getting ready to start baking my gingerbread houses to assemble this weekend. I'm interested in trying something new this year and use poured sugar insted of melting hard candy for windows.

I just want to run this by you all and see what you think:

I was planning on using 1 cup of water to every 2 cups of sugar.
At what temp do I add the coloring?
Do I let it cool a bit before pouring it into the window and door openings? I want to get the edges to be a bit more soft looking than when I have melted jolly ranchers.

Thanks!

I just want to warn you that I'm not going to be of any help, but I have a story about the poured sugar. When I was younger, my mom saw this on Martha Stewart and tried to do it. Well, when the sugar was all melted, she would go to pour it and it wouldn't harden immediately, she ruined a good pot over it and was so frustrated. She was cursing off Martha Stewart and we ending up not making the sugar windows and just hot gluing our gingerbread house b/c my mom was so pissed off. Ever since then my family has never wanted to make another gingerbread house.

You should add color at around 265F If you use regular food coloring add it around 240F as you want time for the water in the color to evaporate. Powdered or Gel colors can be added at 265F with no problem. This gives the colors time to saturate the mixture assuring you get the color you are looking for.

Rgds
