I made a cake today and I'm supposed to take it to church for the ladies meeting. It is all buttercream icing. It is 96 with high humidity. I have it in the refrigerator right now, should I leave it there until time to leave(its a 25mins trip) and put it under the AC vent in my van? Or can I put it in the freezer for 30mins-1hr and then transport? I would hate for it to melt. Please help. This is my first cake made for anyone.

If you keep it in the fridge and then under the A/C in your van, it should be fine. I've done that before w/ no problems. You might want to start your vehicle and make sure it is cold before you put your cake in there.

I agree! I work almost exclusively in buttercream it should travel quite well if it is chilled! I also recommend having you vehicle started and the air conditioner on for a few minutes (5-10) before you are ready to go!

next time try the recipe for high humidity buttercream. It holds up extreamly well without melting or wilting.
