Can anyone offer a great Lemon Cake recipe. My pregnant SIL is requesting a very lemony cake for her baby shower. I mean she really means a lemony cake. You know how pregnant women want what they want Razz. Kidding-she's my girl and I want to come through for her. Any good recipes out there?

i know there are some great recipes on here also check marthat stewart site she has yummu cakes on there too!

I don't know if you wanted scratch or a doctored mix but I use a doctored mix and get great reviews on it.

1 box DH lemon cake mix (along with what it calls for on the box)
1 small box of lemon pudding (instant-powdered form)
1 egg (this is in addition to what the box calls for)

Bake as normal (this will make about 6 cups of batter)

I use the sleeved fillings and have never had any complaints. You can purchase these on line (try www.kitchenkrafts.com or www.ckproducts.com )

Personally this is enough lemon for me and I just use buttercream, however you could flavor your buttercream lemon also... and if you were using fondant flavor with lemon too... but I might suggest if you flavor the buttercream or fondant then maybe go with a raspberry filling... Just some thing to think about.

I made a lemon cake from the barefoot contessa show, try foodnetwork dot com for the recipe. I guess it was more like a loaf, but it had a lemon glaze and lemon icing and it was really good and nice and lemony.
