Okay, here's a doozie guys Very Happy

I have a tasting next week with a potential wedding cake customer. Most times, they know what kind of cake they want to taste. This one, she only knew a little of what she wanted. Two things--she wanted chocolate ganache and she wanted to try almond cake. Aside from that no guidance. I normally give them three types of cake to try. When I asked what else she wanted to try she said anything that will go good with Thai food.... Mad

Great. I have no idea where to go from there. Any suggestions? I'm thinking coconut because Thai food has lots of coconut in it. Also mango maybe?

I'm at a loss here, any ideas would be greatly appreciated!

Thai food is wonderful! Dessert wise, coconut is used a lot. They also use a lot of lime in cooking (not necessarily just for desserts). Mangos and bananas are also used in typical Thai desserts. Hope this helps and let us know what she decides!

Maybe some kind of "almond joy" cake. You can combine some soft and chewy crushed macaroons with whipped chocolate ganache as a filling and then cover in regular ganache. Or perhaps a coconut flavored buttercream as a filling.

Perhaps just incorporating crushed almond joys into the whipped ganache will achieve all the flavors she is looking for. Ganache, almonds and coconut.

Well let me tell you what I've been thinking of...

I was thinking a chocolate cake with coconut cream filling and chocolate ganache. And also a white chocolate cake with either mango or lime curd. What do you guys think? I don't know what to put with the almond cake. The chocolate ganache as Noosie said would be good.

You might want to try my Hawaiian wedding cake recipe. It has alot of the ingredients that you have mentioned. Send me a PM and I'll give the recipe to you if your interested!

It's rich, and decadent and would go great with chocolate ganache!

Okay I was thinking with Thai food often being rich and spicy and full of flavors especially thai with coconut milk or cream that a cake with more subtle flavor might be best....

Well I wouldn't want to go too subtle with the chocolate ganache right? Something too light would be overpowered by the chocolate wouldn't it?

I love Thai one of my favorite desserts is sticky rice or coconut ice cream with mango, how about a coconut cake with a mango curd or chunks of mango in coconut custard/cream.

Neni, I thought about white cake with mango curd but I think the coconut is a good idea too. Where can I find a mango curd recipe?

HEY i am Thai. Well part Thai, my mom is a full fledged Thai while my dad is German...but any who. If she is having Thai food at her wedding, the food is going to be spicy, very bold, may have coconut in it, most likely there will be rice, and i am sure there will be more spicy food...lol. Maybe you could also incorporate Tapiocoa(sp?...my spelling is terrible...lol) not sure how... i would defintly use coconut in some way, there are also many fruits that you could find at an oriental market that Thai people generally eat. Can't think of the name but one that comes to my mind looks very odd and strange(you know those french tickler things, that kids wear in their tongue peircings or ear peircing...they look like that, but red) but they are very sweet and taste great. You could also try looking through a Thai recipe book and read some of the desserts they have in there. That would give you some great ideas on what flavors to use...HTH and if you got any questions on some Thai food dishes you can ask me, and if i don't know the answer i'm sure my mom will know. Oh also, i noticed each time i went to thailand with my mom, all the desserts they had were always very sweet...but they were a natural sweet...you know like sweetness from the fruits and they used sugar cane, and their iced coffee was too die for(could also give you a mouth full of cavities with one sip...lol)

Okay guys, here's the update! I was up all night making samples and this is what I came up with:

coconut cake with pineaple curd
chocolate cake with mango cream filling
almond cake with white chocolate coconut mousse

all covered in chocolate ganache.

I brought some leftovers to work today and the big hit was the coconut! I hope the bride likes it as much. Wish me luck, I meet with her today!!
