Seems easy enough but I thought I'd ask before the wedding day. It's my first time coating a fondant covered stacked cake with corse sugar. I plan on using wilton's clear piping gel brushed on to my colored fondant covered tier and pressing handfuls of the sugar onto the cake. I couldn't find any pics of this in the galleries but there are two pic examples in "Wilton Tiered Cakes" book that is out right now: pg 11 "Sparkling Tribute" and pg 23 "Retro Romance." I'd love any advice or tips from anyone who has done this sort of thing. Thanks. |

BUMPING you up to the top, but it sounds like you have the right idea=) I have seen people put nuts on the side and they lay down paper to catch the extras, then lean the cake a bit and roll their hand full of the nuts onto the cake=) But hopefully someone who has done this can help ya out better! I'm so excited ... I just KNEW that I had a cake like this saved in my favorite photos, and I found it!!! Here it is ... a beautiful creation by the very talented PerryStCakes ... is this what you want your wedding cake to look like? I know hers is covered in IMBC, not fondant, but I think you could achieve the same look with piping gel, as you mentioned. Maybe Deborah (PerryStCakes) could give you some tips ...

Oh I bet the cake will be beautiful but I don't think I would like the taste of sugar all over my cake.

I did one of those cakes as well... it's really simple to do. You shouldn't have any problems. |

Yes! that's what I'm going for. But we are doing it with a celadon green under the sugar. Thanks for posting that pic. Well...its comin up fast---so excited to get started! Thanks again for the pic. |

Here is a photo of a friends cake that was covered in the heavy sugar crystals. Just another option with fresh flowers in between layers. Her colors were a celedon green as well. |

Does putting the piping gel over the fondant change the intensity of the color underneath? I would love to try this technique one day!

I have seen this look too. You can do it with Wilton sugar sparkles. They come in a little jar in many different colors. You have to work fast with them though, they melt in your fingers pretty fast. I'd probably set your layer on a tilting stand and put them on very fresh BC.
I love that look!! For a matte look, the course crystals would be nice. Sort of reminds me of "Stucco"........LOL But classy stucco!!! LOL
