These days, I am so busy (thank God!) that my house is now being taken over by my business. Even as I type this, right now my kitchen table (which is a large country kitchen table that seats 8-10) has fondant tools all over it and fondant roses currently drying and waiting for dusting. My family room coffee table has several boards full of daisies I made yesterday and some sea creatures for a sea cake. My dining room has cupcake holders, boxes of saran, and some cake boxes. My spare bedroom has a folding table in the middle of it, with shelves all around fullof boxes, boxed up gum paste flowers, and royal icing flowers. My office is full of paper work I need to do, and a sales receipt pad is constantly by the phone. This week I need 10 sheet cakes, a star shaped cake, a 12 inch cake and a 3 tier wedding cake. So the oven is constantly on, as I can only bake one cake at a time in my conventional 30 inch oven. My DH and I had no idea how this would kick off, (I still am not making enough money to quit my day job, but man, I am itching to!) and we even thought about moving and building an outbuilding just for my cakes. But we are in a incredible neighbhorhood, where houses are going up in value, and I am in a prime location, with a lot of young urban couples who don't think twice about spending a 100 dollars for a birthday cake. And I love my house. We live in a neighbhorhood that doesn't allow outbuildings. And my DH has a pressure washer business so I can't have the garage. So we have decided to look into adding a room off the kitchen for me. At first, we thought it would just hold some tables to work off of and a fridge and move my freezer from teh garage into there, and put in a sink..we didn't want to make it too much of a kitchen type thing as incase we decide to sell in a few years we who would want a house with a commericail kitchen! SO we want to be able to break it down easily. But then the discussion of an oven came up. I need more then this little oven I have. So I would like to look into used bakery equipment and get maybe a rack oven (Oy, the $$$$$$!) or something that will bake 10-12 cakes at a time.
So my long winded question is this: Do any of you use a system like this? How do you get all your cakes baked? Do you use large mixers, and such? What brands do you recommend? How did you chnage your recipes?

PS I have already looking into renting a kitche. No thanks. They want a ton of money, and the hassel of trying to get all those cakes home isn't worth it!

Sorry but I don't have any advice. I was just shocked to read that you have a FT job! Wow, how do you do it! Your cakes are great! Good luck on whatever you decide!

hahaha! I just give up the small things. Like Sleep.
I have found the hardest thing is that people who call me on Mondays and want a cake for Friday. or worse, they call me on Wednesday and want a cake for friday. If i was doing the cakes full time, I could tell them sure! I feel like I am throwing money and opportunity out the window!
