Stiff buttercream does it for me - and hang on to it for a minute.

I've used craft (or popsicle) sticks which worked great. I would cut them into thirds first (or half if the roses are larger). Then stick them into the sides of the cake in a stair step pattern. Lay your roses on the sticks and fill in with rose buds and leafs. Very nice looking effect!. OH HEY AGENTCAKEBAKER!!! OMGsh!! I didn't even realize I was answering YOUR question!!! LOL.
