No Egg Cake Recipe Request ... Please?

Could anyone share a good recipe for no egg cake... 'cause 3 of my friends kids has egg allergy so they can't eat the regular cake serve in every gathering...

One of the kids ask my DD if I can bake a cake w/o egg on my DDs bday so she can eat the cake too with my DD too. She told my DD, she wanted to taste it but afraid she'll get sick (She haven't tried even on her bdays)... I don't want them to be left out so I planned on researching a no egg and nuts cake for the kids to enjoy on my DDs bday.

If anyone has a good recipe for this kind of cake... Can I please ask a favor to share it?

white cake:
1 1/2 cup flour
1 cup sugar
1 tsp baking soda
1/4 tsp salt
1 cup water
1/3 cup oil
1 tbsp mild vinegar
1 tbsp clear vanilla
1/4 tsp almond extract

this doesn't make a lot of cake, but it can easily be doubled.

chocolate cake:
3 cups flour
2 cups sugar
6tbsp cocoa
2 tsp baking soda
1 tsp salt
2 cups water
3/4 cup oil
2 tbsp vinegar
2 tsp vanilla

i've made both of these with great success. add the vinegar right before baking.

you could also experiment with cake mixes. use 1/4 cup silken tofu (pureed in a blender) for each egg needed. but, heres a tip, if you use this method use 1 "egg" less than the box calls for. ie, if you're supposed to use 3 eggs, only add 1/2 cup of the tofu. tofu has no flavor or taste, so don't worry about it affecting the taste of your cake.

Just an FYI:

I've made the Wacky Coco Cake found in the chocolate cake recipe section about three times in the past month and it doesn't call for any eggs and is really moist and rich tasting. Everyone I've made it for really loves it. I usually use buttercream and/or MMF on it.

We have Vegan friends, and whever I need to make something without eggs, I just use EnerG Egg Replacer. I find that it's nice to have in the house anyway, if I run out of eggs. There have been a few times when it's taken more recipes to make a cake, or I've needed to rebake something, but haven't had the eggs. i just use the replacer, and I've never noticed. icon_smile.gif

You can substitue one egg for one tbsp of soy flour with 1 tbsp water. It works in all recipes except ones that need the egg to be levened. So if you are making a quiche or a meringue it would not work but in a baked good no problem.
Here are other substitutions for you as well just in case you don't have a health food store nearby

1 egg=
1 tbsp of arrowroot powder + 3 tbsp water
1 tbsp corn starch + 3 tbsp water
1/2 large banana mashed
1 tbsp ground flax seed + 3 tbsp water
1 tsp gelatin dissolved in 3 tsp. boiling water (gelled slightly in your freezer which takes 3-4 mins) then beat as you would a reg. egg
You do not need egg in baking. There are a lot of healthy alternatives.

If ever you find yourself without an ingredient google celiac disease and they are good for substitutions.

I was impressed by the vegan white cake recipe here on cc. I received lots of compliments when I made it. It even rises like a "normal" cake. thumbs_up.gif

If you look for "crazy cake" on the web, you will get several variations of a no-egg cake.

I just posted this to another request regarding an egg and peanut-free chocolate cake. YUMMY!!!

Don't forget to read all the ingredients because some ingredients may have been produced in a plant with peanuts or eggs. And you can't use meringue powder either! HTH

Awesome posts! Last night I took almond cupcakes to a party and I noticed one of the little girls did not eat any of the baked goods on the table. Her mom told me she is severely allergic to eggs. Wow! It really made me think as I eat eggs every day, my family too, as all of use do sports and eggs are such an amazing protein source.

 

Well, this morning I thought I had to look for vegan and eggless recipes and try them at home. So ladies, thank you so much for posting these recipes. My "kitchen lab" will be open for a few weeks testing these recipes!  :D

 

Oh, another thing. I love using pudding mixes in my recipes, they add such "yummyness" to all the cakes. And it just occurred to me they might have eggs on the ingredient list. I'm going to check now. If anyone of you knows a way to make an eggless pudding, let me know!
