Stacked Cake With Ganache

I'm new to the forum and have been decorating cakes as a hobby that makes a little money for several years. I'm making a groom's cake for my friend's wedding. She developed a recipe for a chocolate cake that is topped with a whipped cream layer followed by ganache (it is frozen in between layers). We have only made this cake in a single layer. She wants to make it a 2-layer cake with the whipped cream in the center and covered with ganache. She also wants it to be a 3-tiered stacked cake. Any suggestions? I had trouble with the last 2-layer cake I made that I covered in ganache. The side "seam" didn't look very good. The sides were not smooth. Thanks for the help!
