I have found a recipe that I LOVE. It is not too sweet, and it is so easy to work with, but I get a lot of air bubbles. Any suggestions on how to reduce the air bubbles but still have a light icing?

Are you using the paddle (flat beater) rather than the wire whip beater attachment on your mixer icon_smile.gif

Thank you for the information. I tried the sponge roller last weekend and I was asked "how did you get your fondant to taste like BC". I was really proud of the way it turned out.
Thanks again
