I've heard that, but I don't think it applies to "cake art". Today I made a cake that looks like a book. Books aren't very appetizing either, but we're gonna eat it anyway. Razz

Hmmm, so i am guessing that most of you on this thread have never heard of the Blue Quandong

It is Native to Australia - but perhaps not shipped or stocked in a store near you.


Here is a little extract for you -
Blue globular fruits that ripen between August and February, in subtropical rainforest areas. The outer part of the fruit is fleshy, and encloses a very hard stone with a deeply pitted surface which contains 5 cells, some of which are small and rudimentary.

What do you think Blue Jelly is made from - ?
Blue Quandong Jam - ?

Yes, a natural Blue Food in Nature.

Good grief - i have seen beautiful Blue and White cakes in France...
and eaten them

Struggling to believe that people think Blue is not aceptable or so widely used throughout Europe and here in Australia.

There's a whole wide world out there - filled with Blue cakes - Thumbs Up!

My first gumpaste class the instructor had us make roses and told us we couldn't use blue because there is no such thing as blue roses. Laughing

That's the only time I have been told not to use blue. Afterall, blue bonnets of Texas are uh 'blue'. Duh!

Thank god we have have come along way in the last 20 years - and that not only have times changed but opinions.
Otherwise we would all be stuck back in the *back in my day* when all cakes were white with a bloody red rose piped on top - Rolling Eyes Rolling Eyes Laughing

If there was no blue, I would not be decorating cakes.............blue is my favorite color................and who said "no natural blue in nature"...........ever seen a blue hydrangea???????????

I think the whole consept of blue food and appetit is twaddle. It has never put me of eating Laughing but here is an interesting link that people might have a good chuckle at.

Edited to add: I'm not disputing the studies that say blue is an unappetizing color for food, but I think it's silly to think that you can't put blue on a cake. And it's pretty random to tell a client that you won't put blue accents on a cake because people won't want to eat the cake if you do!

That's odd, recently I just had a customer say she didn't like blue cake, thought it was unappetizing, so we had to redesign in pastel blue (because the design had to be blue)

LOL, the first wedding cake I ever made the bride wanted red velvet, but wanted the actual cake to be dyed to match her wedding colors (one layer each of burgundy, forest green, and dark blue) instead of the traditional red. I did as requested, and so when the cake was cut and served, everyone had a piece of striped burgundy, forest green, and dark blue cake on their plates. And all the guests (I was at the wedding, it was a friend of mine and I did the cake and directed the wedding) ate every last bit of the cake, the blue layer included, and a lot of them came back for seconds. So I guess even blue dyed cake is ok. Very Happy
