I'm having a cookie exchange party at work. the week before thanks giving any great ideas on how to make the invitations fun? i bought festive harvest sheets of paper to post the invitations all around . |

I love the smell of cardamom, especially when heated in the oven. It gives the home such a welcoming fragrance. Combined with brown sugar, the aroma of comfort abounds.

Brown Sugar Cardamom Cookies
1/4 cup butter, softened
1/3 cup brown sugar, firmly packed (light or dark)
1 egg white, cooked slightly
1 tsp. lemon juice
1 tsp. vanilla extract
1 cup all purpose flour
1/2 tsp. ground cardamom
1/8 tsp. salt
nonstick vegetable spray
1/4 cup powdered sugar, sifted
1 tbsp. skim milk or soy milk
Preheat oven to 375 degrees. Combine butter and sugar in a mixing bowl. Beat with an electric mixer at medium speed until fluffy. Add egg white, lemon juice and half the vanilla. Mix thoroughly. Sift together flour, cardamom and salt. Gradually add to sugar mixture. Beat well until mixture forms a soft dough. Transfer dough into bottom of an 8 inch square baking pan coated with cooking spray. Bake 35-40 minutes. Cut immediately into squares. Cool completely on wire rack. Combine powdered sugar, milk and remaining vanilla in a bowl. Mix thoroughly. Drizzle over cookies. Serves 12. |

Thanks for posting that recipe Theresa. I've had cardamon cookies one time a couple of years ago and I still dream about them. I will definitely be trying your recipe. |

Ricotta Cheese Cookies
1/2 cup butter,softened
1 cup sugar
2 eggs
1 teaspoon vanilla
1/2 pound ricotta cheese
2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Preheat oven to 350 degrees, lightly grease cookie sheets.
In medium bowl, cream butter and sugar until smooth. Beat eggs in, one at at time to creamed mixture, reduce mixer speed to low, add vanilla and ricotta cheese. Combine flour, baking soda and salt; gradually add to cheese mixture. Drop by rounded teaspoons, 2 inches apart onto prepared cookie sheets.
Bake for 8 to 10 minutes until edges are golden. Allow cookies to cool on baking sheet for 5 minutes before removing to wire rack to cool completely.
Frosting
2 Tablespoons butter softened
2 cups powdered sugar
1/4 teaspoon vanilla extract
1 1/2 to 2 Tablespoons milk
In medium bowl, cream together, butter and powdered sugar, beat in vanilla and milk gradually until a spreadable consistency is reached. Frost cooled cookies. |

Fruit 'N Nut Drops
1 (8oz.) package cream cheese, softened
1 cup (2 sticks) butter or margarine, softened
1 cup firmly packed brown sugar
1 egg
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped dates
3/4 cup chopped walnuts
1/2 cup candied cherry halves
walnut halves
Beat cream cheese, butter and sugar in large bowl wih electric mixer on medium speed until well blended. Beat in egg, add flour, baking soda and salt; mix until well blended. Stir in dates, chopped walnuts and cherries.
Drop by rounded tablespoons onto greased cookie sheets; top each with walnut half.
Bake at 375 degrees for 9 to 11 minutes or until edges are lightly browned.
Makes about 4 dozen. |

The North Pole recipe site is already on the cookie exchange document, but thank you so much for reminding us about it. It has so many recipes it boggles the mind!! I'd love to go through and make every single one of them! (And eat them too! hahaha!) |
