Just keep telling yourself - this is a business, it's not personal. If you couldn't come down on her and get the payment today , it will be a lesson learned for next time and we won't judge you! It's harder for some people to do this than for others.

Wow. Some of you seem to have really good business practices (indydebi, for example). Is there anyone on here who has a copy of their contracts posted, for those of us who may start a business? Some of these things I wouldn't think of to put in my contract until I've had to learn the hard way. I'd rather take the cue from other's who have gone before me! I'm not as business minded as I'd like to be, but yet, I'd like to sell legally...and I'm sure that's true for many on here.

SHE PAID!!!! Monday afternoon. A cashier check and a separate check for the deposit. Since I am new at this, at first I had no idea why she left two checks, I was out of town, somebody else received the money for me.

When we talked friday she even order an extra 1/2 sheet of cake. I never mentioned this friday, because I thought you guys would say I was being extra nice to her. I tried to convinced her out of it, because I didn't want to make so much cake, but she says she already has pretty boxes with their names on them, so people can take leftover cake with them.
I never heard of this, but at the end, more money for me right?, and like you guys say, we are here for business.

I just got back from Shopping for her cake, never had bought so many cake ingredients at once. I guess I better get used to it, right!

Alls well that ends well! Very happy for you. If you want to be extra nice thats you perogative. I think we get concerned, cause we tend to notice the really nice people Wink tend to get taking advantage of...and we don't like seeing that.

Ok, So here is the picture I promised.

I think we should start a section named: “ Do not”, because I had serious issues that went wrong and now I can tell you:

If you are an experienced baker, you already know this (you can stop reading this), but if you are a newbie, you should read, because nobody told me this before, I guess I should have taken a wedding cake support system class before I attempted a 5 tier cake, but I didn’t, so I learned this the tough way this weekend.

“DO NOT” cut the board of the cake the same size of the cake if you are planning on adding fondant to the cake.
I thought It would give a smooth finish...the buttercream flushed to the board of the cake. When we placed the top tier, the fondant started sliding off, and my husband asked: why is the fondant falling?, oh my God!, I realized there was no support for the fondant at the edge.
I had to take it down, that is why you see the top tier, still in the other table.
All tiers were done this way, but the two bottom tiers, had support underneath, each had a larger area under it to rest on. And the 4th and 5th tier were fake, so the fondant was thinner and already dried and sticked to the styrofoam. So there was no real problem.

“DO NOT” use a 6” round plate to support a 8” hexagonal cake, it is not enough support, the cake started leaning. Well it didn’t help that I had a small piece of styrofoam under the plate.I guess if you have a real cake underneath it might not be a problem. I don’t know I am just guessing.

“DO NOT” mix the sizes of the separator plates. Next time I will properly label them.
I had SPS in between each tier, even the fake ones. But I placed the wrong plate on the second tier, and since I had already inserted it. I didn’t want to take it out and make more holes in the cake, since the 3rd tier was fake, I thought, no big deal no real weight to mess up the mistake, WRONG!!! My second flower tier, had the columns of the SPS not touching the second cake tier. I dind’t have any more SPS plates, so I used a wilton plate a little smaller, so when we placed the 3 top tiers in place at the Venue, the cake was not stable from the 3rd tier up, the weight from everything above made all the rest of the cake lean to one side. I almost had a heart attack.


How I fixed my problems,
• I had to run to Michaels in record speed and bought foam board and dowels, placed the top tier on it, and cut another board, this time supporting the fondant, Thank God there was ribbon designed to go around the base.

• I had to add extra dowels for the top tier, on some corners outside of the small foam supporting the top tier.
We later had to cover them with flowers.

• I took all the fake tiers down, including the flower tiers, removed the SPS plates, sticked wood dowels, all through them so all tiers were attached. And this time they were Ok.

We finished 3 minutes before the reception was about to start.
And all weekend I was wondering if the cake survived. The sister of the bride contacted me this morning to return the base, so I asked her, so how was it? She said the bride was impressed, the cake was beautiful and delicious, it made it all the way to the end of the reception, they took tons of pictures, she said her daughter sweet 16 party is next year and that they definetly want me to make their cake.

I want to thank everybody here in the forum for all your help.

I am so glad all this is over and believe it or not, I can’t wait to start my next order. It’s this weekend. A cupcake tower, it should be easy! We will see.
