I totally understand...... many years ago, when I lived in Ca (where you cannot buy it retail), I called and hounded the home office of Sysco, until they put me in touch with the local broker in my area for commercial vendors. Um...I dont remember who said they put it on cupcakes... but I bet those look amazing!!! Does it have issues at all since the cuppies don't have straight sides, but get smaller at the bottom? You don't happen to have any pictures do you??? Wink Now I'll be dying to try this!!

LOL! I didn't even look at the recipe file first...was just messing around. How funny would it be if it was similar to Mel's without even trying. What's that saying? Something about great minds....? Maybe in this case it's great tastes think alike??

Hey Linda . I just looked at my bettercreme and it has a frozen shelf life of 1 yr and 90 days unopened in the fridge and 7 days in the fridge after its been open !

Hey Linda... I think it is 18 months/frozen. I would always take my cooler with me filled with ice, and load it straight into the cooler, and straight home into the freezer. A case is 12 quarts.. Smile

Here's the link to the tiki cake!

I definitely had a few issues with the cake compressing...for lack of a better word. We had a big thick dowel through it, so it wasn't going to fall over, but it kept sinking down lower and lower so the bottom started to bow after awhile. It was probably just because it got so tall with the 4 4X2 inch layers that were torted with the pineapple filling. But it tasted incredible!

The kids loved the cupcakes! And my Mom was SO happy Very Happy

I won't even pretend to take credit for this though! I think it was a little over a year ago there was a big buzz around CC about adding the vanilla caramel coffee creamer into cake mix. At this point, it's been so long that I don't even recall who originally did it!! It's really yummy, but you have to be careful that the cake doesn't sink! I like using all kinds of creamer for different fun flavors. It just opens up so many possibilities what with all the flavors they make!!

Having cupcake liner issues. HELP! Ok, I should be getting the Solo cups in the mail in the next week, but in the meantime am just using the standard paper ones. Here's my problem...

I read about spraying the cupcake liners with baking spray so that the papers don't stick to the cake when you want to peel them off and eat them. So.....I did that. And they came out greasy! The cupcakes are beautiful, but the liners are greasy. What did I do wrong?

Ugh! I've never had to spray the liners, I'm pretty sure they are not meant for that! If you spray them with greas they will be greasy! I don't mean that to sound as smart-@ssed as it probably did! Embarassed The whole point of liners is that you don't have to use grease/spray. They should just peel right off. I don't think there is a way to spray them and have them not be greasy, but someone who has done it may know better!!

I have never sprayed a liner in the #@ yrs I have been baking ! They always peal right off. The only time they even think about sticking is if they are NOT cool yet and if they are under baked. But I havent had that problem in yrs. Did you try them and they stuck ? Or are you just trying to make sure they dont ?
