The key lime cupcakes were great! We also liked the lemon poppy seed ones. The cotton candy were good (I didn't think my cotton candy flavoring tasted anything like cotton candy though- which was not the books fault).
I also made white chocolate lemon cupcakes from the chocolate book. I filled them with the lemon curd (recipe from the book....was fabulous) and a whipped chocolate ganache and then topped them with lemon buttercream. They were fabulous! Next time I think I would just fill with the lemon curd though.
I want to try the cinnamon toast ones. They sound yummy! The pineapple buttercream sounds great too!!! |

gabbenmom...thanks for your reviews! I have looked at the key lime cupcakes but was a little afraid of the meringue. Was it easy to do? |

I think so lol!!! It has been awhile. No, I didn't have any problems with it! You could always do a lime buttercream or a lime white chocolate whipped ganache. Even a lime homemade whipped cream. Gosh, now I want cupcakes!!! Let me know if you make them how you like them! |

Yummo! All those options sound so good! I'm not much on meringue myself.... mmmmmm lime white choc whipped ganache!!!! Are there recipes here? |

I use the whipped chocolate ganache (it is wonderful!!)on here and just use more white chocolate (than the recipe calls for semi sweet chocolate). I use about 12 oz of white chocolate and one quart of heavy cream. I think you could just put fresh lime juice in it. I have been looking for lime extract or oil but I haven't found it anywhere. I hope that helps. Let me know how it turns out.

I was looking through my book last night. I noticed I altered the Key Lime cupcakes a tiny bit. I did not use coconut flavoring in the cupcakes or the meringue (my mom doesn't like coconut flavor). I used vanilla in the cupcakes and lime juice in the meringue. I remember the meringue being really good with the lime juice.
I also looked up the cinnamon toast ones. They sound great! One question, does the frosting have a strong cream cheese flavor? I am not a big fan of the flavor of cream cheese, so I was just curious. |

Thanks for letting us know the changes you made. I wondered if you used actual Key Lime juice or just lime juice.
I'm not a big fan of cream cheese icing either but if you make the cinnamon cream cheese icing it isn't as strong of a cream cheese taste...in my opinion.
mazz,
I asked about the cookies at the bottom because a couple of the recipes in the book (cookies and cream cupcakes and banana pudding cupcakes) have you put one in the bottom of the cupcake liner before you pour the batter in. I was just curious how the cupcakes baked up with the cookie there. |

I've made the cookies and cream with the half oreo on the bottom off the liner. They baked just fine and rose fine and everything. I'm making snickers cuppies tonight and they called for frozen, chopped snicker crumbs in the bottom and those seem to have baked fine as well. I haven't tasted them yet.....oh but I will!!!  |

Hi Sue,
I am bad I just used lime juice. I can not find bottled key lime juice and have heard they are horrible to juice. I usually use a combination of fresh and bottled.
Good to know about the cinnamon ones! Thank you. I will have to try them!!! |

I had a chance this past weekend to try more of the recipes from this book and I took the cupcakes to work for everyone's opinion on them.
Triple Butterscotch Cupcakes with Butterscotch Maple Frosting-very moist cupcake with creamy frosting...a big hit at work!
Rocky Road Cupcakes with Milk Chocolate Rocky Road Frosting-very, very yummy!!!!! A HUGE hit at work!
Cinnamon Toast Cupcakes with Cinnamon Cream Cheese Icing-I had made these before so I knew they would be a hit and sure enough everyone loved them. One note: I use a tip 1M to make a swirl on top of the cupcakes and the icing recipe does not make enough to frost all the cupcakes. It takes about another 1/2 recipe to do them all.
Lemonade Angel Cakes with Creamy Lemonade Frosting-these were not good...I ended up throwing them out and not taking them to work with me. The cake just didn't taste right and then the frosting just wasn't working for me either...too much cream cheese taste and the lemonade with it was weird tasting. This is the first recipe I have not liked in all of Anne Bryn's books.
