Key Lime Pie cupcakes...

1 large lime
4 large egg yolks
1 package yellow cake mix
1 pkg Vanilla pudding
1 1/4 cup water
1/3 cup oil

Filling

1 can sweetened condensed milk
1/3 cup lime juice

Preheat to 350

Prepare the cupcake batter:

With a citrus zester or fine grater, zest the lime peel and reserve one teaspoon.
Cut the lime in half and squeeze out two Tablespoons.
Set aside.
Separate three of the eggs, place the whites in a large clean mixing bowl and the yolks in another mixing bowl.
Add the remaining egg, cake mix, pudding mix, water, oil, lime zest and juice to the yolks.
Blend with an electric mixer on low speed for 30 seconds. Scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping down the sides again if needed. The batter should look well blended.
Spoon 1/4 cup batter into each lined cupcake cup, filling it two thirds of the way full.
Place the pans in the oven. Bake 18-22 minutes
Bake the cupcakes until they are lightly golden and spring back when lightly pressed with your finger.
Remove the pans from the oven and place them on wire racks to cool for five minutes.

Loosen the edges of the cupcake liners with a butter knife, lift the cupcakes up from the bottoms of the cups using the end of the knife, and pick them out of the cups carefully with your fingertips. Place them on a wire rack to cool for 15 minutes before filling.

Meanwhile, prepare the filling:
Place the sweetened condensed milk and Key lime juice in a small bowl and stir until combined. Spoon the mixture into a pastry bag fitted with a medium tip. Press the tip 1/4 inch into the top center of each cooked cupcake and squeeze the bag to release about 1 tablespoon filling into the cupcake. Scrape off any excess filling with a rubber spatula.

You may now dust them with confectioners' sugar and serve.

Linliv46.. Hey Linda, I posted that cake with the diploma with the EI on the gumpaste backing. The one we chatted about a week or so ago . If you want to take a peak . I was happy with the way the diploma turned out doing it that way. Thought you would want to know since you are also trying different ways with the Edible Images to ! Ok back to cuppys !

Hey Fiddlesticks, do you always put your edible images on gumpaste? I've never used an edible image but that might be the next thing I try.

GrandmaG.. NO this was the first time I did that. I made a diploma and I wanted it to be higher then just the EI laying on the icing. I was happy with the way it worked out. Yes you should try them, they are fun and you can do so many things with them. My cake is in my photos if you want to see what Im talking about.

Ladies, I am so sorry to ask this but I have searched and keep missing the page where you first talk about using the crunchies. Are you putting them in the cuppies or the icing? Or just tell me what page to go back to.

We left for vacation and I've worked extra hours since then and have also been painting the house so I haven't been paying as close attention to this thread as usual, (shameful, I know) Crying or Very sad

Melody, thanks for the recipe!! They sound easy and awesome!! I have a question, tho. Was thinking about baking these in the nut cup/solo cup thingys. Would I stll need to remove them from those to cool?? Thanks!!

These sound wonderful Melody.... but I got lost at the filling Confused Confused
You use the liquid condensed milk and lime juice as the filling??

Also... can you, or anyone, tell me where to buy the 4oz nut cups? I can't find them anywhere..... thanks Smile
