Did anyone see the unwrapped on FN last night about cakes? The ice cream cupcakes from maggie moo's look really good and yummy, and "look" easy to make, cant wait to try them later this summer! You bake a cake, and ther's only looked about a half inch-1 inch thick. and then they use a round cookie cutter and cut circles of cake to fit in the bottom of the cupcake wrapper. Then they squish it down, and then they add a scoop of ice cream, and freeze it for a couple of hours. Then they top that with a layer of ganache, and freeze for a small amount more, then they decorate it, and box them up for display.
Yummy!!!!
Wasn't there a recipe like that in this thread. It said to bake cake in a jelly roll pan. If I remember correctly, it was a sandwich cake with ice cream in the middle. Ofcourse, it didn't have ganache though.

Its real potato Salad I made for dinner and just stuck in a liner and added parika on top ( like I always do ) Just so I could Post it for you! Come On Mel !! 3 watt bulb ! Wheww. What a day. Here are the cupcakes I made for the gals at my Hair Salon. They loved them and I ended up with 3 different orders before I got out of there.
The suns are the raspberry lemonade, lemonade betterceme filling, lemon Vegan fluffy Buttercream. Sorry I can't remember where I found the picture for the idea.
The sunflowers were disappointing to me as far as the decorating. I thought they would be the easiest but I think my buttercream was just too soft. Red velvet with cream cheese filling and Decorator's Cream Cheese Frosting from CC.
The Flags are the Golden Vanilla Cupcakes. I used Vanilla Soy milk and used Torani's Vanilla Bean syrup for the flavoring. Filled with Torani's Vanilla Bean and Bettercreme and frosted with Decorator's Cream Cheese Frosting with Torani's Vanilla Bean syrup.
The Vanilla Swirls are The Golden Vanilla, Torani-Bettercreme filling and Decorator Cream Cheese frosting.
Oh, I also used hi-ratio shortening for the first time and I'll never go back! Makes frosting sooo creamy!! Love it!

It was a real yummy epsiode. I think I'll make a cake, then torte it to the thiness it says, then use the cookie cutters. Yummy....I think I want to use that one light and fluffy ice cream, or I could use hubby's new toy, fun!
Sarsi!!!! Do they have blue moon ice cream where you are? That is my fav! And the only place I've ever seen it is in Wi.......

Thanks ladies! The Vegan Fluffy buttercream is from the Vegan Cupcakes Take Over the World. I just have to order that book!
1/2 C shortening ( I used hi-ratio)
1/2 C butter
3 1/2 C confectioners sugar
1 1/2 tsp vanilla
1/4 C soy milk or soy creamer
Beat shortening and margarine until well combined and fluffy. Add the sugar and beat for about 3 minutes. Add the vanilla and soy milk and beat for another 5 to 7 minutes until fluffy.
Since I'm not Vegan (just like the recipes) I used butter. I also used vanilla soy milk and used a lot of Torani's Vanilla Bean syup.

GrandmaG, those are sublime!! I la-love the suns!!! They look so cute and happy! Glad you finally got to try the hi-ratio!! I, too, will never go back. It's just not the same! I haven't used Crisco in almost 2 years except for frying chicken!!
