I'm a schmuck thats all there is to it . I'm doing 350 cupcakes for my brothers wedding and I'm not sure at all about a couple things. If you guys could help that'd be great!!! The wedding is on a Saturday but I have the rehearsal on Friday afternoon into night and the bachelorette party on Thursday night plus I think they expect me to help decorate the hall too, so my time is going to be really screwed up (late nights here I come!!)
1. What's the best way to freeze these little buggers? Am I supposed to wrap them individually? Also, when and how should I defrost them.
2. When can I start filling them? There's going to be a couple different mousses and a lime curd. (the mousse I was thinking about using Riches so I dont have to refrigerate)
3. I'm using plain ol' buttercream so I figured if I had them iced on Friday it wouldnt be a big deal.
That's it...I think, unless I'm missing something that I'm not aware of.

well, i think i would start by telling them that i simply cannot help decorate the hall, as much as I would like to. you are spreading yourself way too thin.
i'm not sure about freezing cupcakes. good luck! |

I second misha35 on not decorating the hall, sorry. I don't know about freezing the cupcakes either, but I would think that you would have to wrap them individually. But my freezer wouldn't hold that many!

I'd have to agree. You can't be in 2 places at once. With that many cupcakes, you need ton concentrate on that. I'd just talk to your cousin and say "What's more important...me helping decorate the hall or cake for your wedding".
I don't know about freezing cupcakes. I think there was a post a while ago that the experiment didn't turn out.

Yes, I definately dont think I'll be decorating the hall. I still need some help on the freezing/thawing questions. It's going to be a lot cooler here this week and I thought I'd start baking in the next day or two. |
