I'm running my first ever cake course, it's a two day event and I'm going to teach people how to make my snowflake and sparkle cake - but have some other suggestions and ideas for variations etc. It's going to be small, 4 people attending, and it's being run at an arts centre near my house.

I'm nervous about messing it up. I'd love to hear your good / bad experiences so I can make sure I give these people a great few days.

My worst was booking a two day Debbie Brown course and turning up on day two - duh...

No suggestion, as I'm nowhere near good enough to give courses, but knowing your stuff, you'll be fine

I'm sure you will be fine! What a great location! I checked out the past class list and I would be living there taking all of the classes! Smile

I've only taken a basic cake decorating course, so I can't really give you any advice. Take-home sheets with tips, tricks, directions, recipes,etc., are always great in my book!

I want to go to England and take your classes! Smile

It looks like you have everything covered in your class summary. I have taken many classes, most were problem free. I am sure you will do very well.

Be sure there are beverages available-water, tea hot/cold whatever.
schedule in breaks for the bathroom and chatting

One class I took we were required to stand around the instructor (and there were many of us) for about 30 minutes. It was difficult to see and hear and it was very tiring. With ony 4 students that shouldn't be a problem.

If you have recipes for icing or whatever, and will share, be sure to have copies ready.

If you use any special tools the students might not have, it would be good to offer that item for sale.

I wish I could be there, too.
