Melt chocolate over a double boiler... pour over the back of a buttered cookie sheet and smooth with an offset spatula, then wait a few minutes... unitl it cools but is still pliable. Then take the flat end of a spatula ( metal works best ) and push to form the curls.
If you have a slab of cold marble because, let's face it, don't we all? That works too  |

let the chocolate get soft a bit and then use a peller to do the curls:o) hope this helps...
