Had anyone actually ever received a copy of this. if so can you forward this to me?

To Irene and all who want scratch conversions - I have done a few that I have listed below. Converting ingredients is a little harder than liquids because 8oz of weight doesn't always (or ever) equal 1 cup. I found a good link at http://www.onlineconversion.co.....ooking.htm. What is nice about this site as compared to others I looked at, is that it has lots of ingredients, and converts both US and UK measures - whichever you prefer.

Here is the way you use it to do conversions for the matrix: For example let's do all purpose flour. In the top box you select your ingredient - so choose flour, US, all purpose. In the next box you put the quantity you want and in the From This box, the weight you want - I buy 5 pounds so 5 goes in quantity and pounds in the From this box. Then in the To this box I select cups [US] and hit recalculate. In the bottom box you get 5lb=22.824 cups. Then divide 22.824 by the 5 and you get 4.56 which is the conversion factor for the matrix.

So here's a few I did
5 lbs AP flour to cups = 4.56
5 lbs granulated sugar to cups = 2.366
2 lbs brown sugar to cups = 2.27
2 lbs confectioners sugar [aka powdered, aka icing] to cups = 3.48
1 lb butter to cups = 2
1 lb butter to tablespoons = 32

Another note: if you are converting large quantity to small [like cup to tsp] then conversion factor should be GREATER than 0. If you are converting small to large [like cup to pound] then conversion factor should be LESS than 0.

Hope this helps - it seems complex but this will give you best answers for non liquid ingredients (sorry - I was a science major in college Rolling Eyes ) Make sure you put in the quantities you buy - you can ignore the density section - it's not necessary unless you have the densities for your ingredients (now that's a REAL science geek)!!!
