| I roll on my granite countertops. It is a great surface for it. If you have very pourous granite (not all of it is) you could seal it. |

| why not use PS instead? at least then if you don't get it all off it doesn't tast nasty. but if you are worried about powder on the finished surface, use a fluffy brush and "buff" the surface |

| I just line the pan with parchment, so when it is cold it just lifts off. the springform sides are off by that time, so it is just lifting it off the bottomw. |

When I took the Wilton classes, my instructor suggested a regular to thicker layer of buttercream due to alot of people don't like fondant.
that's 'cause even wilton knows wilton brand fondant tast ... |
