because they are less work, usually less money, and you can pump a sheet cake for 100 out in a couple of hours, as compared to a wedding cake that take 6 hours or more.

| yes you sure can. I've put 3 layers of icing on a cake before (crumb coat, icing, then another icing) when I've come in the next day and didn't like the way it looked. |

Another thing that no one has mentioned, is if you are doing 30 cakes, thats really 60 layers that need to be baked. Two layers per cake.
