you're right you're board isn't strong enough, I've had this happen to me when I was taking classes, my instructor told us to use double thickness boards on any size sheet cake.

I was using wilton premade gumpaste just fine, others were using fondant with tylose or gumtex added, I've not tried it with fondant yet.

I think my settings were pressure 5, speed 3

I ordered straight from Americolor all big bottles, much cheaper than our local shop. Might be worth checking it out and restocking on other colors.
