When making figurines do you prefer Fondant or Gumpaste and why. I see flowers being done in gumpaste but more of the figurines done in fondant.

I haven't worked with fondant much. I'm going to make the MMF this weekend. But can someone tell me....is there a recipe for Satin Ice or is that something you purchase??
