I did the beach ball in my pictures. I just misted the styrofoam ball with a spray bottled and placed the fondant strips on it.

I usually use a piece of non-skid mat. I've had too many cakes move and ruin my border using the buttercream to glue it.

Can't help with the icing, but viva is a regular kitchen towel but what makes it special is it has no pattern in it. So when pressed against the buttercream it doesn't add texture.

Perhaps you could negotiate in your offer for a review after a certain time frame. for example reassesment in 6 months. Just make sure you get it in writing if you do so.
