I've never heard of having to let it sit! We used marzipan under fondant in my culinary classes and we always did both the same day. I can't recall ever seeing oil seep into the fondant.

I actually like working with the petal! Ice the top of the cake first and then smooth the sides little section by little section! I think it's easier as you have less to concentrate on at a time!
