This is a moist recipie, when I used it to make a purse cake. I did add one egg worth of egg replacer to make it sturdier for sculpting. To make a 13 x 9 in sheet I double the recipie, to make a double layer 6″ cake I divide between two tins.

This cake won rave reviews! It is a dense cake, somewhat like a pound cake (if such a thing is even possible without any eggs). The recipe I started with had reviews suggesting using only 3/4 cup of butter, which I’ll probably try next time.

After trying several different egg replacers in my cakes, this is the one that I’ve found to work the best. There was no noticeable difference between a cake made with this egg replacer and one made with eggs. When used with certain Duncan Heines cake mixes, your cake will be both milk-free and egg-free.
