Food processor carrot cake with cream cheese frosting

This is from my my most trusted recipe source. You can not go wrong with this one. Even carrot cake haters have been converted!!

Ingredients

  • 2 1/2 cups ap flour
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves
  • 1/2 tsp salt
  • 1 lb med carrots peeled (6-7)
  • 1 1/2 cups granulated sugar
  • 1/2 cup light brown sugar
  • 4 eggs
  • 1 1/2 cups vegetable oil
  • 1 1/2 toasted pecans (optional)
  • Frosting

  • 8 oz cream cheese soft
  • 5 tblspn butter
  • 1 tablespoon sour cream
  • 1/2 tsp vanilla ex
  • 1 1/4 cup confectioners sugar

Instructions

  1. Preheat oven to 350 and spray and line 9×13 pan with parchment.
    Whisk together dry. In food processor, grate all carrots the wipe bowl and put metal blade in. Process sugars and eggs until froThy them stream in oil until well mixed. Mix with dry and carrots until blended add nuts if using. Bake 35-40 mins
    Frosting mix wet and incorporate sugar till fluffy with whisk
