Chocolate Whoopie Pies with Chocolate Filling

CHOCOLATE COOKIES

4 cups all-purpose flour
2 teaspoons baking soda
1 cup cocoa powder
dash of salt
2 cups granulated sugar
1 cup shortening
2 eggs
1 cup milk
1 cup warm water
1 teaspoon vanilla extract

CHOCOLATE FILLING

6 tablespoons unsweetened cocoa powder
2 egg whites
2 teaspoons vanilla extract
4 tablespoons all-purpose flour
4 tablespoons milk
4 cups powdered sugar
1 1/2 cups shortening

Preheat oven to 375°F.
In a bowl, combine flour, baking soda, cocoa powder, and salt.
Mix until blended completely, and set aside.
Combine sugar, shortening, and eggs in a separate mixing bowl.
Beat for 2 minutes.
Add dry ingredients to egg mixture and mix. Add milk and warm water.
Beat mixture for 3 minutes on medium speed.
Add vanilla extract to mixture.
Keep beating until ingredients are thoroughly blended.
To make cookies, drop batter onto ungreased, nonstick cookie sheet by rounded tablespoon.
Bake for 10 to 12 minutes, or until centers of top of cookies spring back when gently pressed.
Transfer cookies to a rack to cool.
Cool completely before adding filling.

To prepare filling, beat egg whites until stiff . Set aside.
In a separate bowl, combine vanilla, flour, milk, sugar, and shortening and beat on high speed until completely blended.
Fold beaten egg whites into mixture.
To construct the pie, pipe filling onto bottom side of a cooled cookie. Place a second cookie, bottom side down, on top of filling to create the pie.

You list cocoa powder in one half of the recipe and unsweetened in the other - did you mean to use two different types of cocoa powder??
