Simple 'n Moist Strawberry re-mix

Posted by WyoMom2b This recipe will fill 2-10", 2-6" rounds and a few cupcakes left over. Simple and flavorful! I have used this recipe to carve cakes as well as stack so it is durable as well. If you can't find strawberry pudding mix, you can substitute strawberry gelatin but I found the cake is more moist with the pudding. I have also used cheesecake flavored pudding with a little strawberry extract as well. Mountain Dew Cupcakes

Posted by Brandy1621 My sister inlaw is a Mountain Dew fanatic and is expecting her fourth child now. So, I wanted to do something special for her. I decided what better than Mountain Dew cupcakes that she had been asking me to make for about four months now. What?Don't judge I have been busy :). She originally saw the recipe on I made some changes as the original didn't have any orange flavoring so, I definately had to correct that. Hope you enjoy these as much as we did. I ate 3 and am not even the pregnant one. Sorry I don't have a picture, they... read more

Fluffy American Buttercream

Posted by BakingJeannie This is like a cross between the Swiss Meringue buttercream and the American buttercream. You may use poured fondant instead of the powdered sugar and egg white combination below. The buttercream is fluffy, does not crust but smooths perfectly. It's a variation of Mike's Buttercream. I have been using this recipe in place of my regular Swiss Meringue buttercream since in Florida the Cottage Law does not allow a meringue buttercream. It stands up well in the humidity (adding the Sweetex) and I can get it really smooth quickly. Just stick the... read more

VEGAN Vanilla Frosting

Posted by Cookiexxx I had my first vegan request, tried one recipe, which failed miserably. I came across this one, and it was FANTASTIC. Even my BF, who's a meat-and-potatoes kind of guy, tried the vegan cupcake with vegan vanilla frosting and loved it! Ingredients: Amount Ingredient 1/2 C shortening 1/2 C soy butter (Earth Balance is good) 3 1/2 C confectioner's sugar (powdered sugar) 1 1/2 tsp vanilla 1/4 C soy milk (or rice milk. I used vanilla flavoured soy milk)     Directions: Cream together shortening and... read more

Grapefruit Cake with Grapefruit Buttercream

Posted by Jackie This cake is fresh, bright, with a flavor you can truly appreciate whether you simply love a good grapefruit or have spent a month and unaccountable dollars trying to replicate. This Grapefruit Cake with Grapefruit Buttercream has an original flavor, both clean and pure. After the warm cake emerges from the oven, it is brushed with grapefruit juice which soaks deep into the layers, making an unbelievably moist and tender cake (with just a hint of true tartness). The Grapefruit Buttercream lends a sweeter aspect to this cake. Made with a grapefruit... read more
