Southern Suzie's Easy Red Velvet w/ Cream Cheese Icing

Ok… here is the easy red velvet from my family passed down.. it was asked for in a forum, so I will post!

Southern Suzie’s Easy Red Velvet w/ Cream Cheese Icing

Ingredients

  • RED VELVET CAKE
  • 1 box butter cake mix (we always use DH)
  • 1 T. cocoa
  • 1 t. vanilla
  • 1 c. buttermilk
  • 1 oz red food coloring
  • 1 stick margarine (we always use country crock sticks)
  • 3 eggs
  • 1 t. baking soda
  • 1 t. white vinegar
  • ICING

  • 1 box confectioner’s sugar sifted
  • 8 oz cream cheese
  • 1 stick margarine (again we use Country Crock sticks)
  • 1 t. vanilla
  • 1 c. chopped nuts (your choice, we use pecans)

Instructions

  1. CAKE:
  2. Mix box mix w/ cocoa (sift them both). Add vanilla, buttermilk, food coloring, margarine and eggs. Blend until well moistened. In seperate container, stir together soda and vinegar, then add to cake mixture. Bake at 375 for 25-30 minutes.
  3. This is based on 2 9″ pans and my own oven, may take longer depending on yours
  4. ICING:
  5. Allow cream cheese to come to room temperature, and add all icing ingredients together. Spread between layers and cover tops and sides.
