Pineapple Pecan Cake

This cake comes out extremely moist and yummy and is a snap to whip up. It is especially good when topped with cream cheese frosting.

Pineapple Pecan Cake

Ingredients

  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • 1 (15 ounce) can crushed pineapple, with juice
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.

2 Sift together the flour, sugar and baking soda. Stir in the eggs, pineapple and vanilla, mixing until blended. Fold in pecans. Pour batter into prepared pan.

3 Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Is this cake ok for stacking? I need a good recipe for a stacked cake, only I will be omitting the nuts, that wont mess up the cake will it?
