Peanut Butter Cranberry Cookies

A few months back I was looking around my kitchen for a what to “jazz up” my peanut butter cookies and came across a bag of dried cranberries. Poured some in the batter at the end, baked, and VOILA! The cookies are delicious! My family and friends love them! They are great for the holidays too as the cranberries add a nice touch of red.

Ingredients

  • 1/2 c white sugar
  • 1 c packed brown sugar
  • 1 c peanut butter (I use Jiff creamy)
  • 1/2 c shortening
  • 2 eggs
  • 1 1/2 c flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 c dried cranberries

Instructions

  1. Combine the sugars, peanut butter, and shortening. Beat on medium speed until well mixed. Add eggs and beat well. In a separate bowl, combine flour, baking soda, and salt. Gradually add the dry mixture to the peanut butter mixture, beating on low speed until just blended. Stir in the dried cranberries.

Shape dough into 1 1/2 inch balls and place 2 inches apart onto a lined baking sheet. Make crisscross marks with fork tines. Bake for 10-11 minutes in a preheated 350 degree oven. The cookies will be very soft to the touch but they will be done. Cool for at least 5 minutes before moving cookies to a cooling rack. Yields: approximately 4 dz cookies.

This can be easily doubled!
