Key Lime Cake With Key Lime Buttercream

I was asked to make a Key Lime wedding cake with Raspbery filling and Key Lime bc. I ended up using a combination of ingredients from two different recipes. It has been a favorite of many since. This makes a very moist cake or cupcakes!

Key Lime Cake With Key Lime Buttercream

Ingredients

  • Key Lime Cake: 1-(18.25oz.) lemon or yellow cake mix 1-3.5oz. instant lemon pudding mix (dry) 4 large eggs 1/2 cup key lime juice (bottled) 1 cup vegetable oil 1/2 cup water Key Lime Buttercream: 1 cup unsalted butter 1 cup Crisco 2 teaspoons real vanilla 1/4 teaspoon salt 8 cups powdered sugar 6 tablespoons key lime juice (more if desired for consistensey and flavor)

Instructions

  1. Directions for Key Lime cake:
  2. 1.Preheat oven to 325 degrees.
  3. 2.Combine above ingredients and beat with electric mixer for 2-3 minutes
  4. 3.Pour into prepared pans and bake for 45 min. or until done. Cool for 10 minutes and turn out from pans.
  5. *It has been a while since I made this cake. I can't remember what size pans I used. I used either 2-8" rounds or 2-9" rounds.
  6. Directions for Key Lime Buttercream:
  7. Beat butter and shortening together for about 5 minutes. Beat in vanilla and salt. Add powdered sugar 1 cup at a time alternating with the key lime juice.

Was this buttercream recipe made when Crisco had trans fat in it??? I truly believe it makes a difference, just curious? I am going to try this as i have been craving key lime!!!!
I am making a key like cake for a wedding next spring and was experimenting with fresh lime juice and buttercream, but I found that the fresh juice broke down the fat in the buttercream. Does using bottled keylime juice make a dfference?
Using the bottled lime juice worked great for me... making this cake a second time... my mother loved and requested it for my aunt's birthday! It is awesome!
Made this cake for a customer. Came out great! If the cake taste half as good as the buttercreme did, it is out of this world. icing was so creamy and delish! Will make this again. Used a convection oven and it baked perfectly. Thanks!

i love key lime pie and made this recipe over the w/e with ddaigle's "easy raspberry filling" it was a huge success!!!!! :-) so moist - just melts in your mouth and the combination of flavors with the filling was just DIVINE!!!! took it for a gathering after church and no lie - the cake was gone within 10 mins - people were talking about it all over the room!!!! can't wait to make it again and take it into work this friday - thanks so much for sharing!!!!!

I have to say that I do use high ratio shortening in the bc but I posted the recipe using Crisco because not everyone can get high ratio. Use the high ratio shortening if you have it.

This cake and buttercream are AMAZING! I wanted to try something cool and light for a church lunch being held outside this weekend. When I got to the church, we had a LOT of cakes and I was concerned we might not even need to cut my cake but the other ladies insisted. Everyone went CRAZY over this cake!! It was GONE in no time flat. This is my new favorite!
I bought vanilla pudding by mistake. But because I doubled the recipe I added one box of vanilla pudding and one box of lime jello. I also used white mix vs yellow. The cake was AMAZING! Was used for a wedding and was a HUGE hit!! Thanks so much!
I baked a different cake (I can't get mixes here without paying outrageous prices) but used the key lime buttercream recipe from here and it was delicious! It made a HUGE batch though, and I only had a 9x13 in cake so I have a ton of yummy buttercream leftover. I guess I need to make some cupcakes for the office to use it up! thanks for sharing.
Does the key lime juice affect the color of the buttercream icing?

This is going to be my Daughter's 5th Birthday Cake. I just carved the shape of the cake and ate a chunk of the throw-aways...soooo limey and delicious! The cake is also perfectly dense and moist, easy to carve and strong enough to stack. I am making the raspberry filling right now to go between the layers. Can't wait for the party and for all to taste!
I really want to make this cake this weekend for my sisters birthday but I have a question. Where do you find Key Lime Juice?? You're not just meaning lime juice like you would buy lemon juice are you? Do I get it in like the mixed drinks section near the alcohol? Thanks!!
