Easy Chocolate Cooked Icing

This is perfect for those 8 layer chocolate cakes. There aren’t too many ingredients, and it’s easy!

Easy Chocolate Cooked Icing

Ingredients

  • 2 1/2 cups sugar
  • 1/3 cup cocoa powder
  • 2/3 cup evaporated milk
  • 1 stick margarine or butter
  • 2 tsp vanilla

Instructions

  1. In a saucepan, combine sugar, cocoa powder, and evaporated milk. Stir well. On medium heat, bring to a rolling boil. Continue stirring for about 4 minutes. Then add margarine (butter) and vanilla. Continue to stir over heat until melted and smooth. Remove from heat. At this point, I usually pour through a strainer into another saucepan. You may cool in refrigerator, stirring about every 2 or 3 minutes, or cool at room temperature for about 20 minutes. When mixture is cool, you can pour over cake layers. You may need to keep scraping around edges of cake as it runs down and reapplying the icing to the top of the cake until it gets firm.

Tastes good, but probably not good for you!
