Darn Good Caramel Apple Cake

This is the best cake in the fall served warm with ice cream. It is also great anytime in the year. I have never had the first complaint about this cake. All you will hear is chewing and “yummy”.

Darn Good Caramel Apple Cake

Ingredients

  • 2 1/2-3 cups of sugar
  • 3 eggs
  • 1 1/2 cups of vegetable oil
  • 3 cups of all-purpose flour
  • 2-3 teaspoons of vanilla (I happen to love the taste)
  • 1 cup of chopped pecans
  • 2 1/2 cups of diced apples (good baking kind)
  • 3 sticks of butter
  • 2 cups of brown sugar
  • 1/4 cup of milk

Instructions

  1. Preheat oven to 350. Cream together sugar, eggs and oil. Add flour and mix together. Add vanilla, nuts, and diced apples. Spread into a greased 13 x 9 inch baking dish. Bake for 45-60 minutes. When cake is done poke holes in it and pour on the topping.
  2. Caramel Topping
  3. Heat all ingredients together. Bring to boil while stirring constantly. Boil for 2 minutes and pour over cake.

This is the best apple cake I have tasted, I add some cinnamon to the batter and it is to die for! I make cupcakes with it and you just have to fill the liners to almost the top because they don't rise very much but other than it is sooo good!

I have got to try your cupcake idea. That was really clever thinking. I can picture it right now how yummy those cupcakes looked with chucks of apples in each one. it makes my mouth water.

Hi Kalisha! I am looking for a good apple cake recipe for a stacked cake I need to make and this sounds wonderful! I am new to baking though, is this cake dense enough to be stacked (minus the caramel topping)? And what round deep tin size would you recommend? Thank you in advance for your help!

Cakekiasan- I really don't think this would be the right apple cake recipe for stacking. It may come out on the dry side without the caramel topping. However it would make a very delicious mouth watering looking bunt cake. The finish product has a rustic, homemade, pure comfort, rich outer crust.

Could you help understand your instructions, please. Is the caramel topping ingredients only a jar of the icecream caramel topping or is this anything else mixed with it as the instructions say "heat all ingredients together and boil for 2 minutes" . Thanks,

the caramel topping is the butter, brown sugar, and milk listed in the ingredigents.
