Crunchy Peanut Cookies
This is a recipe I got from a book. It’s a really easy cookie recipe, and would be great to do with the kids.

Ingredients
- 125gm softened butter
- 150gm of chunky peanut butter
- 225gm sugar (I use caster, but it does say granulated)
- 1 egg, lightly beaten
- 150gm plain flour
- 1/2 tsp baking powder
- pinch of salt
- 75gm unsalted natural peanuts. chopped.

Grease 2 large baking sheets Place butter and peanut butter in large bowl and beat together. Gradually add the sugar and beat together well. Add the egg, a little at a time, until it’s combined. Sift flour, baking powder and salt into peanut butter mixture. Add peanuts and bring all together to form a soft dough. Wrap in cling and chill in fridge for about 45 minutes, or longer if possible.
Preheat oven to 190C/375F/Gas mark 5. Form dough into 20 balls and place them on baking sheet about 2 inches apaprt, flatten them slightly with your hand.
Bake in preheated oven for 15 minutes, or until golden brown (I have a fan oven and they usually take about 8-10 minutes)
They come out very very soft, so wait a couple of minutes, and then cool on a wire rack.
